  7. Prepare 3 tbsp of soured milk.
  8. You need 1/2 tbsp of vanilla extract.
  9. You need 2 cup of all purpose flour.
  10. Prepare 1/2 tsp of baking powder.
  11. You need 1 tsp of baking soda.
  12. Prepare 1 tsp of ground cinnamon.
  13. You need 1/2 tsp of ground nutmeg.
  14. You need 2 dash of ground ginger.

Mini Apple Banana Walnut Bread Muffins instructions

  1. Preheat oven to 350°F.
  2. Muffins:.
  3. In a large bowl wisk together flour, baking soda, baking powder, nutmeg, cinnamon and ginger. Set aside..
  4. In a medium bowl mash banana with sugar and butter..
  5. Wisk in egg, vanilla and milk..
  6. Add wet to dry just until incorporated. Do not overmix..
  7. Fold in apples and walnuts..
  8. Spray 48 mini muffin cups with nonstick spray. Inside and on top..
  9. Fill muffin cups to the rim with batter..
  10. Topping: in a small bowl combine sugar and cinnamon. Wisk with fork..
  11. Place 3 or so pieces diced apple on top of each muffin..
  12. Sprinkle on a bit of walnut..
  13. Sprinkle cinnamon sugar mix over entire muffin top..
  14. Bake in oven for 12-14 minutes or until toothpick comes out clean..
  15. Let stand 5 minutes then transfer to wire rack for cooling..
  16. Serve and enjoy! :).
  17. These are great with a cream cheese drizzle or a sweet cream cheese dip..
