In a large bowl mash the bananas using a spoon or fork and then add the ground chia mixture, maple syrup, vanilla essence, melted coconut oil and chopped medjool dates. Combine together all ingredients and stir well until it becomes a smooth homogenized mixture. Almond butter, mashed banana, almond milk and a tiny bit of canola oil provide the moisture in the recipe, while chia seeds replace the eggs.

- In a greased muffin tin, scoop out the batter into the tin. Slice the remaining banana into slices and place on top of batter. Sprinkle over the other half of the remaining chia seeds on top of the batter..
- Bake for 20 minutes until a skewer inserted comes out clean. Serve with a piping hot cup of tea or coffee as a great on the go snack :).
Make sure you use lovely moist flakes of coconut and not desiccated coconut for the best flavour. you could also try these Healthy yoghurt and oat muffins for an after school snack. No refined sugar, naturally gluten free, and SO yummy! Medjool dates also work in this recipe. If you need to soften the dates a bit, just soak in some warm water before putting the blender. This is especially helpful if you have a less-than-awesome blender.
