And this particular recipe is more special because it also has matcha (just happens to be made with ripe bananas!) Ingredients and variations My pistachio muffins use up three ripe bananas, some ground up pistachios in the flour, whole wheat flour, a tidge of matcha and some roasted, lightly salted pistachios for the crunch. Fill the muffins papers ¾ of the way up with muffin batter. Allow muffins to cool completely before unwrapping. I love matcha and matcha muffin is one tender treat to go for. I don't know if it was the matcha powder that made the muffins quite dense but I like the taste anyway.
