Ingredients of Healthier Sunny Morning Muffins (adapted)

  1. Prepare 1 cup of Strawberries, chopped.
  2. It's 2/3 cup of Agave (natural sweetener), plus 1 tbsp + 1 tsp Agave.
  3. It's 1 1/2 cup of Whole wheat flour (you can do 1/2 and 1/2 AP flour & whole wheat, but if you want to keep it healthy, use unbleached (and organic if you can swing it) all the way!).
  4. You need 1 pinch of Ground cinnamon (can use up to 1/8 cup).
  5. It's 1/2 tsp of Baking soda.
  6. It's 1/4 tsp of Ground nutmeg (allspice / cinnamon works or leave out).
  7. You need 1 tsp of Salt.
  8. You need 1 of Ripe banana, smashed.
  9. Prepare 2 of Eggs.
  10. You need 1/4 cup of Canola oil (can sub in applesauce but recommend 1/2 and 1/2 instead of full 1:1 substitution; veggie oil works, too).
  11. It's 1/2 pints of Blueberries (or 1 cup) - I've used frozen in this recipe, and they still came out great.

Healthier Sunny Morning Muffins (adapted) step by step

  1. Preheat oven to 350°F and apply nonstick spray to muffin pan..
  2. In a small bowl mix strawberries and the 1 tbsp + 1 tsp Agave (I used a blender). Let sit (~15 min for strawberries to give off juices).
  3. In a small bowl, mix together (or sift) flour, baking soda, nutmeg (or allspice), salt, and cinnamon. * I used a whisk.
  4. In a large bowl, whisk together banana, eggs, oil (or oil/applesauce combo therein), and 2/3 cup Agave..
  5. Mix dry and wet ingredients until well combined (I was able to blend it all together). Do not overmix..
  6. Fold in blueberries..
  7. Scoop batter and divide evenly in muffin pan..
  8. Bake 30 minutes or until a toothpick inserted to center of muffins comes out with few crumbs but not wet..
  9. Once removed from oven, let muffins rest in pan for 5 minutes. Then cool on a rack to room temperature..
