Ingredients of Purry's Egg Muffins

  1. It's 150 g of all purpose flour.
  2. Prepare 50 g of melted butter.
  3. It's 1 teaspoon of baking powder.
  4. You need 1/2 teaspoon of baking soda.
  5. You need 1/2 teaspoon of salt.
  6. You need 6 teaspoon of sugar.
  7. You need 1 teaspoon of vanilla extract.
  8. It's 300 ml of buttermilk.
  9. It's 5 of eggs.
  10. Prepare 100 g of mozarella.

Purry's Egg Muffins instructions

  1. Put all ingredients and 1 egg (excluding mozarella) in your blender and blend until smooth.
  2. Using a greased 6 hole muffin tin, fill 4 holes halfway.
  3. Crack 1 egg in the centre of each filled muffin hole.
  4. Using your finger, create a well around the egg so it stays centered in the batter.
  5. Sprinkle mozarella on top and bake in a pre-heated oven at 175c for 20 minutes.
  6. After 20 minutes, take the muffin tin out and leave to cool for 5 minutes before serving.
