Ingredients of Healthy Cornbread Muffins

  1. Prepare 1/2 cup of corn meal.
  2. Prepare 1/2 cup of flour.
  3. Prepare 2 tbsp of sugar (I used truvia baking blend).
  4. You need 2 tsp of baking powder.
  5. You need 1/4 tsp of salt.
  6. Prepare 1/2 cup of fat free or 1% milk.
  7. Prepare 2/3 cup of creamed corn.
  8. It's 1 1/2 tbsp of healthy butter spread, melted OR oil of choice.

Healthy Cornbread Muffins step by step

  1. Preheat oven to 350°F.
  2. Line 8 holes of muffin tin if desired or spray with cooking spray.
  3. Whisk together all dry ingredients in bowl.
  4. Whisk together wet ingredients in seperate bowl.
  5. Pour wet ingredients into dry slowly while mixing with spatula.
  6. Using an ice cream scoop or about 1/4 cup, fill muffin tin (approx 2/3 full).
  7. Bake for 18 minutes and remove to cool, enjoy!.
