Ingredients of Golden Tofu Scramble
- You need 2 teaspoons of avocado or coconut oil.
- Prepare 1 cup of red onion, finely chopped.
- Prepare 2 tsp of tumeric.
- Prepare 2 tsp of cumin.
- It's 1 tsp of sea salt.
- You need 1/2 tsp (2.5 ml) of ground pepper.
- You need 1 cup of shredded kale or baby spinach.
- You need 1/4 cup of nutritional yeast.
- It's of Hot sauce, to taste (optional).
- Prepare 16 ounces (453 grams) of firm or extra-firm tofu, pressed and drain.
- You need 2 cloves of garlic, minced.
- Prepare 1 cup (240 ml) of button mushrooms, chopped.
Golden Tofu Scramble step by step
- Add oil to large skillet set over medium heat.
- Once hot, add garlic and onion, cooking for about 3-4 minutes or until onions begin to soften.
- Add mushroom to pan and chunks of tofu. Cook for 10 minutes stirring occasionally. If tofu sticks to pan or becomes dry, add a little water to the pan.
- Add tumeric, cumin, salt and pepper and stir to combine.
- Add the kale and nutritional yeast. Stir and cook for an additional 3-4 minutes.
- Taste and season with additional salt and pepper if desired.
- Serve the scramble warm with sliced avocado and fresh herbs.
